Homemade Oven Sun-Dried Tomatoes! Perfect for adding a burst of flavor to salads, pastas, or simply as a savory snack. Here's how to make these little bites of sunshine right at home


Ingredients:

  • Fresh ripe tomatoes (cherry, plum, or any small-sized are best)

  • Olive oil

  • Salt

  • Optional: Herbs like basil, thyme, or oregano; garlic powder

Instructions:

  1. Preheat your oven to 250°F (or the lowest it can go).

  2. Slice your tomatoes in half and place them cut-side up on a baking tray lined with parchment paper.

  3. Drizzle with olive oil and sprinkle a pinch of salt over them. Add herbs or garlic powder if using.

  4. Pop them in the oven and let them slowly roast for about 2-3 hours, depending on their size. You want them nearly dried but still slightly plump. Keep your eye on them after the2-hour mark to avoid over-drying.

  5. Once done, let them cool and store in an airtight container. Cover them with olive oil, or keep them plain in the fridge for up to a week.


Tip: If you're into meal prepping, make a big batch and freeze them for future use. They thaw beautifully and can bring summer vibes to your dishes year-round.
